Vines of 30 to 50 years old, planted goblet style.
Soil /
Calcareous, on slopes.
Harvest /
Harvest by hand in hard boxes and selection of racemes at winery.
Alcoholic fermentation /
Using only local yeasts. In stainless steel tanks, after a pre-fermentation maceration, at controlled temperature and turned over by hand.
Ageing /
12 months in American (70%) and French (30%) oak barriques and 6 months in the bottle.
Filtering /
No stabilisation or clarification processes are carried out; simply gentle filtering.
Closure /
Natural cork, 44 mm.
