Vineyard /
Vines of 50 to 100 years old, planted in goblet style.
Soil /
Calcareous, on high slopes, where the special microclimate provides very cool evenings, including during the hottest months.
Harvest /
Harvest by hand in hard boxes and selection of racemes at winery.
Alcoholic fermentation /
Using only local yeasts. In stainless steel tanks using the crushing technique, which consists of regularly sinking the cap using hydraulic feet.
Malolactic fermentation /
Depending on the vintage, in stainless steel tanks or oak barriques.
Ageing /
12 months in French oak barrels and 10 months in the bottle.
Filtering /
No stabilisation or clarification processes are carried out; simply gentle filtering before bottling.
Closure /
Natural cork, 49 mm.
