Harvest /
By hand, in 17 kilos boxes. Selection on field and at the winery.
Alcoholic fermentation /
Cold maceration during 20 days. Alcoholic and malolactic fermentation in stainless steel tanks under control of temperature.
Ageing /
During 12 months in new French (80%) and American (20%) barrels (225 L). At least one year resting on bottle before release.
Filtering /
Clarified with egg albumen. No cold estabilisation. Use of polypropylene filter (up to 5 micron).
