Cold maceration during 15 days. Alcoholic and malolactic fermentation in stainless steel tanks under control of temperature.
Ageing

During 6 months in new and second year American barrels (225 L). At least one year resting on bottle before release.
Filtering
/
Clarified with egg albumen. No cold estabilisation. Use of polypropylene filter (up to 3 micron).
