20-year-old vines grown using an espalier system at a maximum distance of 20 km from the winery.
Soil /
Limy, on the banks of the River Tagus, at a height of 700 m above sea level.
Harvest /
By hand, racemes selected at the winery.
Alcoholic fermentation /
After a 4- or 5-day maceration process, the fermentation process takes place in stainless steel tanks at a controlled temperature (25°C).
Malolactic fermentation /
Very short, owing to the low malic acid content, and immediately after the alcoholic fermentation.
Filtering /
Clarification, cold stabilisation, antimicrobial and filtering through earth before bottling.
Closure /
Natural pressed cork powder, 24 x 44 mm.
 
Recommendations
Optimum consumption /
One year after marketing in the month of February.

Temperature: 15-17 ºC.
