“A nice, cold white wine, please”

There is no doubt that it is a very tempting offer when temperatures are warm. During the summer months, the consumption of red wine falls and that of white wine increases, as might be expected, not only because white wines are drunk cold, but also because they are lighter on the palate and their acidity and aromas are more tempting during this season (tropical fruit, citrus fruits, etc.).
However, the recommended serving temperature should not be below 8 or 9°C for white and rosé wines due to the anaesthetising affect of the cold, which causes the taste buds to contract. In addition, the low temperature prevents the release of the aromas, making it difficult for us to interpret the wine's subtleties on the nose.
Those who suffer with the heat might find joy in the use of the Chinese habit of taking hot drinks when temperatures rise. The aim is to avoid a reaction in the body: the more we try to cool down, the more our body insists on maintaining its temperature.
